Its scent is born of a defence mechanism: it is a tree's response to an injury.\u003c\/p\u003e\n\u003ch2\u003eWhat oud is\u003c\/h2\u003e\n\u003cp\u003eOud, also known as agarwood or aloeswood, forms in the heartwood of Aquilaria trees in South and South-East Asia. When a mould penetrates the wood, the tree deposits a dark, fragrant resin. In natural forests, this happens to only about seven in every hundred trees. Since 2004, all Aquilaria species have been listed in Appendix II of CITES, the Convention on International Trade in Endangered Species, and trade is strictly regulated. The name comes from Arabic and simply means \"rod\" or \"stick\".\u003c\/p\u003e\n\u003ch2\u003e70 kilograms of wood, barely 20 millilitres of oil\u003c\/h2\u003e\n\u003cp\u003eThe oil is obtained by steam distillation, and the yield is tiny: 70 kilograms of wood produce no more than around 20 millilitres. Put another way, wood weighing as much as an adult yields roughly four teaspoons of oud oil. More than 150 compounds have been identified in it, chiefly sesquiterpenes and chromones.
