Safranal: the molecule behind saffron

Saffron consists of the dried stigmas of the saffron crocus (Crocus sativus). One gram takes around 150 flowers, so one kilogram takes about 150,000 – all harvested by hand. Around 90 per cent of the world’s crop comes from Iran. The scent develops during drying: heat and enzymes break down the bitter compound picrocrocin, forming safranal (C₁₀H₁₄O), which can make up as much as 70 per cent of the volatile aroma compounds.

In a fragrance, saffron combines warmth with a refined, leathery edge. With rose and oud it is the classic of oriental perfumery, with leather and tobacco it turns dark and smoky, with vanilla and amber golden and sweet. Saffron fragrances unfold most beautifully in autumn and winter and on festive evenings.
