- Carvone exists in two mirror-image forms: R-(−)-carvone smells of spearmint, S-(+)-carvone of caraway – same atoms, different scent.
Peppermint oil consists mainly of menthol and menthone; menthol activates the cold receptor TRPM8, creating its typical coolness.
