Myth or truth?
Statement 1
Caramel in perfume is obtained from burnt sugar.
Myth. No usable extract can be obtained from caramelised sugar; the caramel scent is built as an accord from molecules such as ethyl maltol and maltol.
Statement 2
A caramel molecule can smell of curry, depending on the amount.
True. At low concentrations sotolon smells of caramel and maple syrup, at higher concentrations of fenugreek and curry.
Statement 3
Ethyl maltol is a natural substance from roasted malt.
Myth. The naturally occurring compound is maltol, which forms, among other things, when malt is roasted. Ethyl maltol hardly occurs in nature and is made synthetically.

DISCOVER CARAMEL PERFUMESFrequently asked questions
Is there a natural caramel oil for perfume?
No. No usable extract can be obtained from caramelised sugar. In perfumery, caramel is built as an accord from aroma molecules such as ethyl maltol, maltol, HDMF and sotolon, some of which are also used in food flavourings.
What is the difference between maltol and ethyl maltol?
Maltol occurs in nature, for example in larch bark and roasted malt, and smells of caramel and bread crust. Ethyl maltol carries an ethyl instead of a methyl group in the same position, is made synthetically and is considerably stronger – with a scent of candyfloss and burnt sugar.
How long does caramel last on the skin?
Caramel is one of the long-lasting notes: its molecules remain noticeable on a smelling strip for a very long time, and its warm sweetness lingers. The best test is on your own skin: with every bottle of 30 ml or more we include a 2 ml sample of the same fragrance.
