Cinnamaldehyde and eugenol: the molecules in cinnamon

In fine perfumery, cinnamon usually means Ceylon cinnamon (Cinnamomum verum), the “true” cinnamon that comes mainly from Sri Lanka. Young shoots of the bushes are harvested, in Sri Lanka around the monsoon rains. The rough outer bark is scraped off, and the thin inner bark is peeled away and dried in rolled quills. Steam distillation of the inner bark yields cinnamon bark oil. It is shaped by cinnamaldehyde (C₉H₈O), which usually makes up 65 to 80 % of the oil. The leaves left over from the bark harvest are distilled into a separate oil, dominated by eugenol (C₁₀H₁₂O₂) at usually more than 70 %. Cassia (Cinnamomum cassia) from China and Vietnam is a different species and contains considerably more coumarin.

On the skin, cinnamon is warm, sweet-spicy and faintly woody, with a dry, powdery finish. Ceylon cinnamon is more layered than cassia and, thanks to eugenol, shows a clove-like facet; the leaf oil is rougher and distinctly more clove-like. With orange or mandarin, cinnamon feels bright and lively; with vanilla or tonka, gourmand and soft; with benzoin or labdanum, resinous and deep.

In this selection, cinnamon sits in the fragrance pyramid – in our range just as often in the top note as in the heart note.

How the note behaves

Warm & gourmand

Cinnamon with vanilla, tonka or benzoin. Sweet, soft and reminiscent of baking.

Resinous & ambery

With labdanum, amber or patchouli. Deep, dry and ideal for the evening.

Fresh & spicy

With orange, mandarin or bergamot. Bright and lively, with a warm core.

Curious factIn the 5th century BC, Herodotus reported that giant birds built their nests from cinnamon sticks, and that the Arabians lured them with heavy chunks of meat until the nests broke away from the cliffs – Pliny the Elder already dismissed it as a traders’ tale to drive up prices.

Knowledge to share

Myth or truth?

1 / 3

Statement 1

Ceylon cinnamon and cassia come from the same plant.

MYTH

Myth. They are different species of the same genus: Ceylon cinnamon is Cinnamomum verum, cassia mainly Cinnamomum cassia.

Statement 2

Cinnamon leaf oil smells more of clove than of cinnamon sticks.

TRUTH

True. It consists mostly of eugenol, the typical clove molecule; cinnamaldehyde is present only in small amounts.

Statement 3

Cinnamon oil is made from the tree’s entire bark.

MYTH

Myth. It is the thin inner bark of young shoots that is used; the rough outer bark is scraped off first.

Frequently asked questions

What is the difference between Ceylon cinnamon and cassia?

Ceylon cinnamon (Cinnamomum verum) is regarded as “true” cinnamon and comes mainly from Sri Lanka. Cassia (Cinnamomum cassia) comes mostly from China and Vietnam, smells sharper and rougher and contains considerably more coumarin. Fine perfumery tends to favour Ceylon cinnamon.

What do “cinnamal” and “eugenol” mean on the ingredients list?

Cinnamal is the INCI name for cinnamaldehyde. Both substances are on the EU list of fragrance allergens that must be declared, and in leave-on products they have to be listed from 0.001 %. IFRA also limits how much of them may be used in perfumes.

Does cinnamon in perfume smell like cinnamon buns?

Not necessarily. With vanilla or tonka, cinnamon recalls baking; with resins, amber and woods, it feels dry and spicy. The best test is on your own skin: with every bottle of 30 ml or more we include a 2 ml sample of the same fragrance.
