Benzyl acetate and p-cresyl methyl ether: the molecules in ylang-ylang

Ylang-ylang comes from the tree Cananga odorata, a member of the custard-apple family originally native to South-East Asia. Today the Comoros, above all Anjouan, are the leading producer, followed by Madagascar and, on a small scale, Mayotte. The tree flowers all year round; the blossoms are picked by hand in the early morning and distilled the same day. Steam distillation can last up to 24 hours and is fractionated: the Extra oil comes from the first one to two hours, followed by grades I, II and III. Around 50 kg of flowers yield roughly 1 kg of oil in total. The first fractions are shaped by benzyl acetate (C₉H₁₀O₂), linalool and p-cresyl methyl ether (C₈H₁₀O). In the heavier fractions, sesquiterpenes such as β-caryophyllene gain weight, and germacrene D is also among the main constituents of the oil.

On the skin, ylang-ylang is sweet, creamy and richly floral, with a fullness reminiscent of custard and banana, a jasmine-like heart and a faintly rubbery undertone. Over time it becomes spicier and woodier. It has long been one of the classic building blocks of great floral fragrances. With bergamot, ylang-ylang feels bright and sunny; with jasmine or tuberose, opulent and narcotic; with sandalwood or patchouli, warm and creamy.

In this selection, ylang-ylang sits in the fragrance pyramid – usually in the heart note.

Knowledge to share

Myth or truth?

1 / 3

Statement 1

“Ylang-ylang” means “flower of flowers”.

MYTH

Myth. The name goes back to the Tagalog word “ilang-ilang”; the translation “flower of flowers” is considered a common mistake.

Statement 2

Ylang-ylang oils are graded by the length of distillation.

TRUTH

True. Unusually for an essential oil, the grades Extra to III depend on when each fraction is collected during distillation.

Statement 3

Ylang-ylang “Complete” is the best grade.

MYTH

Myth. “Complete” is the unseparated whole oil. The first fractions, Extra S and Extra, are regarded as the finest grades for perfumery.

Frequently asked questions

What do Extra, I, II and III mean for ylang-ylang?

Ylang-ylang is fractionally distilled: the oils are separated by distillation time and density into Extra S, Extra, I, II and III. The first fractions are the most floral and go into fine perfumery, while the later ones smell heavier and woodier and tend to end up in soaps and cosmetics. “Complete” is the unseparated whole oil.

Where does the ylang-ylang in perfumes come from?

Originally from South-East Asia, the tree is now grown mainly in the Comoros, especially on Anjouan, and in Madagascar around Nosy Be. On Mayotte, plantations shrank from over 1,000 hectares between the 1950s and 1980s to around 100 hectares today.

Why does ylang-ylang sometimes smell of rubber or banana?

It comes down to its chemistry: p-cresyl methyl ether adds a slightly rubbery, medicinal tone, alongside a creamy sweetness often compared to custard or banana. The best test is on your own skin: with every bottle of 30 ml or more we include a 2 ml sample of the same fragrance.
